For me, Thanksgiving dinner is only the prelude to the best part – pumpkin pie! I always make a standard recipe for dessert, but enjoy making another easy pumpkin dessert for those feeling a little more adventurous.
One of my favorites is a frozen pumpkin pie that will bring a smile to any pumpkin pie lover! First, crush 1 ½ cups of ginger snaps and mix them with 1 tbs. sugar. Stir in ¼ cup melted butter and press in to a greased pie pan. Bake for 15 minutes at 300 degrees. Take out of the oven and cool. You can also use chocolate chip cookies, vanilla wafers or graham crackers for the crust.
For the pumpkin mixture, mix the following in a large bowl:
- One cup pumpkin puree.
- One cup sugar.
- One and a half teaspoons pumpkin pie spice.
Fold in two cups of frozen whipped topping such as Cool Whip.
Now for the fun part. Spread softened vanilla ice cream in to the bottom of the pie crust. Pour the pumpkin mixture over the ice cream. Place in the freezer while you prepare the best part of this recipe.
And what would that be? Melted chocolate. It may sound strange, but the moment you taste this pie you will understand.
Take your favorite chocolate and gently melt it in a double boiler. You can melt it in the microwave if you are very careful. To do this, place the chocolate in a glass bowl and begin by microwaving it for 30 seconds. Stir and heat it for ten more seconds. Continue this process until your chocolate is ready.
Take the cold pie out of the freezer and carefully spread the chocolate over the pumpkin layer. You can even do this once the pie is completely frozen, placing it back in the freezer when done.
Allow the pie to thaw just a bit before slicing. Then prepare to enjoy one of the best pumpkin pie desserts you have ever had!
